Hello

1 question:
How and in which file can I specify which fields are mandatory in the registration and which are not?

2nd question:
How can I change the date format to German format?

Have a look at "Custom User Fields" component.
https://www.openteknik.com/product/view/4261/custom-user-fields

This will allow you to create custom fields for registration and allows you to set fields as mandatory for registration
