I have unzipped the Polish language pack into its appropriate directories and swiched the site language , however no changes on site took place ... any ideas why ??

most likely you did not switch off Ossn cache first?
Whenever you're doing any changes (adding/editing/removing things manually) - disable cache from your Ossn admin backend first.
